Hi,
The postals for Winston-Salem are listed as "Winston Salem".

"the dash" is mentioned in the second paragraph of the wikipedia article.

usps is using the variant without dashes, but everybody else is using it with dashes. So I agree we better use the dash variant.
USPS may have a very old system which removes a lot of chars and is restricted to upper case.
